Peel the persimmon and cut it as desired. Drain the mozzarella, cut it in half and chop the chives finely.<\/li>\n<li>For the dressing for this persimmon salad we are going to prepare a Modena and honey vinaigrette that goes perfectly with both the persimmon and the mozzarella. You can find the link to the vinaigrette recipe in the list of ingredients.<\/li>\n<li>Assemble the salad by placing a slice of persimmon in the centre of the plate as a base for the mozzarella and the rest of the persimmon around it.<\/li>\n<li>When all the persimmon is on the plate, add the cured ham.
