How we
grow
our persimmons
1. Pruning
Pruning is carried out in winter when the persimmons have shed their leaves. This is to guide the growth of the tree and ensure that it grows in a balanced and robust manner. Older trees, planted four years ago or more, are prepared for the next cycle by removing superfluous branches, giving the tree a good balance and strength. We select the branches that will bear the best fruit and have the best exposure to the sun.
2. Flowering and fruit formation
Persimmon trees blossom with the arrival of spring. This period is crucial, as a good fruit formation ensures a good harvest.
3. Tying/trussing
We tie or truss the persimmon trees during the growing season to produce clean, quality fruit. This process is essential to make sure that each fruit has enough room to grow and achieve maximum quality and flavour.
4. Organic pest control
We use biological pest control methods that guarantee our persimmon crops’ health and quality. This sustainable and environmentally friendly approach means we can control pests and diseases naturally, without resorting to chemical pesticides that can damage the ecosystem.
We use natural predators and beneficial organisms that feed on specific pests that affect persimmons. We also encourage biodiversity in our fields by growing plants that attract beneficial insects, creating a natural balance that protects our crops.
5. Diligent irrigation
Irrigation is crucial during the fruit’s growth period. Persimmon trees need regular hydration, so we make sure to provide a sufficient water supply. Our system supplies just the right amount of water and nutrients, avoiding waste and minimising environmental impact. The water we use for our crops is rainwater, collected and managed efficiently to ensure sustainable hydration of our crops.
6. Waiting until ripening
The persimmons are harvested between September and December, depending on the variety. Our agronomists take samples of the fruit in the field and measure its ripeness to determine the best time to harvest. We assess the sugar index, firmness, colour and aromas to ensure that each persimmon has reached peak ripeness.
7.Harvesting by hand
When the persimmons have reached peak ripeness, they are hand-picked. We only select the fruit that has ripened under the best conditions. Harvesting is done starting from the bottom of the tree upwards, to avoid damaging the fruit.
Each persimmon is picked one by one without damaging it and then carefully placed in boxes to preserve its quality.
